Amazingly Easy Artichoke Dip Appetizer

While the holidays are coming soon, and fall is in the air, you may want to have on hand this quick Amazingly Easy Artichoke Dip Appetizer. Something warm and yummy to offer guests before the meal or a snack lunch on a cool day! This will be a go to, for you and yours, as you will see. Don’t take my word, just try it for yourself! 

Amazingly Easy Artichoke Dip Appetizer with Triscuits

However, this is quite the favorite warm dish I take to family and friends get-togethers in the fall, after the temps outside begin to drop. Especially when we get together on a Saturday night for a friendly game of cards, usually playing ‘Hand and Foot.’ 

It’s such a fun bunch and we have a great time hanging out and making fun of one another. And, of course, enjoying each other’s dishes, in what is best known as a potluck style. My brother in law unusually makes the meat dish. Then, the rest of us bring a side dish. All to graze all evening long. And, fun times are had by all, win or lose! 

Easy Artichoke Dip Appetizer Recipe:

So, you’ll need to gather together some supplies;

  • Large mixing bowl & spoon
  • 9” X 9” baking pan (I prefer glass or Corningware)
  • Can opener (electric or hand)
  • Cutting knife

Also, you’ll need the following ingredients;

  • 2 cans of artichoke hearts (14oz ea)
  • 1 cup shredded mozzarella cheese
  • 1 cup grated parmesan cheese
  • 1 cup mayonnaise
  • 1 teaspoon garlic powder

First, preheat your oven to 350 degrees. Then, in the mixing bowl, take artichoke hearts and open with the can opener.  Drain liquid from cans and with the cutting knife, chop artichokes in smaller pieces and put in the bowl. Now, add the rest of the ingredients together in the bowl with artichokes and stir with the spoon, until well blended. Next, pour the mixture in the 9” X 9” baking pan. Spread evenly in the pan. Finally, place the baking pan with mixture in the oven. 

Bake until the dish is nice and bubbly. (usually about 20 – 30 minutes) The cheese on top will begin getting brown. Remove from the oven, when this happens, it’s done! LET COOL!!!  It will be piping HOT! After about 5-10 minutes, go ahead and dig in.  Make your taste buds happy…use my favorite, Triscuits!  They are the best for dipping, as they are sturdy enough to get a good helping on top without breaking apart when scooping into the dip. 

But, you can use any cracker or chip you want to try, like Ritz. Maybe offer your guests a few choices. Let them decide their own favorites. You could even add some bacon bits to the mixture! YUM!
